Organic Cassia Cinnamon (Cinnamomum cassia) is a spice originating from southern China and is widely cultivated there. It is also grown in India, Indonesia, Laos, Malaysia, Taiwan, Thailand, and Vietnam. It is normally harvested from mid-August to November and is available in two varieties: Cassia and Ceylon. Both of these are similar in taste and aroma but Ceylon cinnamon is more subtle and refined. Cassia has a warm, sweet taste and is ideal for pastries, sweets and other pastry items.
