Organic Cassia Cinnamon (Cinnamomum cassia) is one of the oldest Indian spices known. It can be found all throughout the year and is harvested from mid-August to November. It has a nutty, woody and distinct taste. Cassia has a warm, sweet taste and is ideal for pastries, sweets and other pastry items. Cassia tends to be a dark brown-red color with thicker sticks and a rougher texture than Ceylon cinnamon but has a stronger flavour than Ceylon’s. Cassia cinnamon is the type most commonly consumed around the world.
